Potato and Eggs

Ingredients
*Potato, raw, 1 small (1-3/4" to 2-1/2" dia.) Egg, fresh, 4 largeParsley, 1 tbspParmesan Cheese, grated, 4 tbsp Onions, raw, 1 small*Extra Virgin Olive Oil, 3 tbsp
Directions
CUbe onion and potato and saute in oilve oil until potatoes are soft. Whip eggs with cheese, parsleya dn salt and pepper. When potatoes are soft, add egg mixture to pan. Keep moving eggs towrd the middle so the eggs can cook. Put pan in broiler and broil till puffy and lightly browned. Enjoy!
