Spicy Shrimp & Black Bean Salad with Citrus Vinagrette

Ingredients
raw shrimp (pound)pineapplesalad greens (bag)red bell pepperred onion1 can of black beans (rinse)3 limes (juice)2 lemons (juice)Orange rind(or juice)olive oilbasis
Directions
wash lettuce
slice pepper
slice onion
cut pineapple into bite size chunks
rinse black beans

use fat free cooking spray and coat fry pan
remove shells if not already done
sprinkle cajun (or other spicy) seasoning over shrimp
cook shrimp on medium heat utnil shrimp are pink

juice lemmons and limes
mix with 2 tbs olive oil
add orange rind or juice to taste
add basil, salt, and pepper to taste.
