Crock Pot Shredded Mexican Chicken

Ingredients
5 lbs. skinless boneless chicken breast2 large onions-chopped2 large green bell peppers-choppedFor juice:Lime zest4 limes2 oz. Tequila1/2 cup water1 Tbsp Sea Salt1/2 Tbsp Coursely ground black pepperPinch of ground cayenne pepper to tast
Directions
Put chicken breasts into crock pot frozen. Cover with onions and peppers.

To make juice:

Zest two of the limes into bowl. Set limes aside for juicing.

Juice all four limes - keeping even the pulp.

Mix lime zest and juice and with other ingredients and wisk together.

Pour over ingredients in crock pot.

Set crock pot to low for 8 hours. Toward the end, you will need to stir to shred the chicken.

Serve with tortillas or over brown rice.

Makes 10 4-oz. servings.

    Good but we changed it and made it better by not adding tequila and instead adding crushed pineapple during cooking and after. It really helped balance out the lime and spice. - 3/27/10

    Great recipe. I only used 3 limes and also added more cayanne pepper, a little cumin and curry powder for a little added kick. Did not use the tequila this time. Will try doing that when I make it again. - 10/14/08

So made it great, since I did not have to make a 2nd dinner for them, since most of the time, they don't wont to eat what I am eating, since I am trying to wotch what I eat.     Pretty good. A little too much lime juice...I would cut it down by one lime next time. I might also use low-sodium chicken broth instead of water to add depth of flavor. I added garlic and omitted the green bell pepper. - 8/11/08

    Sorry, I just noticed your question. Feel free to leave out the tequilla. It just adds a slightly different flavor, but you would be fine without it.
