Delicata Squash & Tofu Curry

Ingredients
396 grams Mori-Nu, Tofu, silken, extra firm 8 cup Delicata Squash (Winter Squash) (by JODIE0321) 1 medium Zucchini, baby 8 oz Almond Breeze Almond Milk, Unsweetened Original, shelf stable 3 tbsp Earth Balance Natural Buttery Spread 2 cup, chopped Kale 4 tbsp Garam Masala (by JACE520) 3 tsp Thyme, ground 2 tbsp Sage, ground 1 tbsp Basil 12 tsp Coconut Flower Sugar (by JEDESP) 2 tsp A Taste of Thai - Red Curry Paste (by LISAG418) 4 tbsp Canola Oil .5 cup, chopped Onions, raw
Directions
1. Drain tofu, cut into 1inch cubes, and get started in the base of a dutch oven or high-walled pot with half the sage, thyme, and basil. stir for a while.
2. Remove tofu, add delicata squash, cut into .25 inch or less thick slices. Add onion. Add zucchini. Add more spices, stir.
3. Add almond milk, garam masala, sugar, curry paste, salt & pepper to taste, and earth balance. Stir, bring to boil.
4. Add kale slowly, stir to wilt.
5. Serve immediately.
