Alfredo Pasta w/ Salmon Croquettes

Ingredients
Alfredo w Pasta:Whole Wheat Spaghetti, uncooked pasta, 8 oz Mushrooms, fresh, .5 cup, pieces or slicesSoy Milk, 1.5 cup Butter, salted, 2 tbsp Garlic, 2 clove mincedall-purpose, unenriched, 1tablespoonParmesan Cheese, grated, .5 cup Shallots, 1 tbsp chopped/mincedPepper, black, 1 tbsp Salmon Croquettes:Pink Salmon (canned), 6 oz (2 cans) Bread, whole wheat (including toast), 2 slices bread crumbsMayonnaise, regular (mayo), 2 tbsp Egg, fresh, 1 largeall-purpose, unenriched, 2 tablespoons*vegetable Oil, 2 tablespoonsOnions, raw, .5 cup, chopped Celery, raw, .5 cup, diced *Lemon Juice 2 tbspPepper, black, 2 tbsp
Directions
Salmon Croquettes:
Preheat oven to 350°. Drain salmon, reserving liquid. Flake salmon lightly, but well, with a fork.
Add the lemon to the reserved salmon liquid and enough cold water to make 3/4 cup liquid; add to the salmon. Add all remaining ingredients and mix thoroughly. Form into 8 patties. Bake for 25 to 30 minutes.

Cook pasta according to instruction and set aside.

Melt butter in a saucepan and saute onion or shallot and mushrooms over medium heat until translucent, reduce heat and add garlic, saute one minute.
Add remaining ingredients, cover, and simmer over low heat for 20 to 30 minutes.
