Ingredients
16 oz serving HOT Pork Breakfast Sausage, 3 cup Black-eyed peas cooked, boiled, drained, with salt 8 slices Bacon 1 1/2 cup, chopped Onions, raw 2 clove Garlic,minced1/8 tsp Pepper, red or cayenne (adjust to taste)1/8 tsp Thyme, ground (adjust to taste)1 Bay Leaf 1/4 tsp Rosemary, dried 1/4 tsp Pepper, black 2 cup White Rice, medium grain 4 1/2 cups water
Directions
in a heavy pot brown sausage and drain,and set aside. Cut bacon in to 4th and fry crisp. Remove bacon and add onions,fry until transparent. Add minced garlic, red pepper,thyme,bay leaf,rosemary,black pepper, black eyed peas and rice. Bring to boil, reduce heat to simmer and cook for 30 minutes.
