Easy Greek Pasta Salad

Ingredients
6 oz uncooked orzo pasta3/4 tsp lemon peel1/2 cup lemon juice1 tbl olive oil1 tbl dijon mustard4 tsp honey1 medium cucumber chopped2 italian plum tomatoes, chopped1/2 cup chopped red onion12 medium pitted ripe olives, halved1/4 cup chopped fresh mint leaves1/4 cup crumbled feta cheese
Directions
1. cook orzo to desired doneness as directed on package
2. meanwhile, in small bowl, combine lemon peel, lemon juice, oil, mustard and honey; beat with wrie whisk until well blended. Set aside
3. Drain Orzo; rinse with cold water. Drain well. in large bowl, combine cooked orzo, cucumber, tomates, onion, olives and mint. pour dressing over salad; toss gently until well mixed.
4. line 4 individual salad plate with lettus. spoon salad onto lettus. Sprinkle with cheese
