Sausage Frittata

Ingredients
1/4 lb Italian Sausage 1/2 cup chopped Onions4 cups, chopped Broccoli1 cup chopped Bell Pepper Red or Orange 16 large Eggs, fresh, beaten with 1/4 c water2 oz Cheddar Cheese, shredded12 oz fresh Mushrooms, sliced
Directions
Brown Sausage with onions. Add broccoli and pepper; cook till softened. Stir in beaten eggs. Transfer to 350F oven for ~30 min or until eggs are just set. Sprinkle with cheese and cook under broiler until cheese is slightly browned.

Serving Size: Makes 8 servings.
