1.5 cup Cracked Wheat Bulgur- Uncooked1.5 cup Water, tap 1 cup Figs, dried .6 cup Cranberries, dried, sweetened (craisins) 1 cup Parsley .5 cup Fresh Mint.5 cup Lemon Juice 2 tbsp Extra Light Olive Oil .5 tsp Salt .5 tsp Pepper, black 1.5 cup Chickpeas (garbanzo beans) .5 cup, strips or slices Carrots, raw
Combine the bulgur and boiling water in a large bowl. Cover and let stand 30 minutes. Stir in the figs and remaining ingredients; cover salad and chill thoroughly.
