Tex-Mex Chicken and Rice Casserole

Ingredients
2 cups brown rice1 can black beans1 chicken breast (boneless/skinless)1/2 cup salsa of choice
Directions
Cook the rice. This takes time depending on the brand you use, so plan accordingly!

In a skillet, spray some non-stick spray and cook the chicken breast.

In an 8-9" casserole pan, pour the rice, beans, and salsa. Shred the chicken and add into the casserole. Mix

Heat at 250 degrees until warm (20-30 minutes).

Serve as is or with Tostitos scoops (10 chips).

    This is tasty! I followed the advice of junkinthetrunk8 and added taco seasoning to the meat! It was great! I also added some shredded cheese. This actually helped hold it together a bit more. I think this is best the second day! :o) - 4/6/09
