Modified Cornmeal Muffins

Ingredients
1/3 cup medium grind cornmeal1/3 cup soy flour1 cup whole wheat pastry flour1/4 cup wheat germ1/2 cup packed brown sugar1 tsp. baking soda2 large eggs, beaten1 cup lowfat vanilla yogurt1 tsp. vanilla1/2 cup unsweetened applesauce1/2 cup raisins
Directions
Preheat oven to 350 degrees. Spray "Texas" 6 cup muffin tin with vegetable spray. Mix dry ingredients and raisins together in a large bowl. Combine wet ingredients and stir into dry ingredients until just moistened. Fill muffin tins and bake 25 minutes. Makes 6 large muffins.
