Harvest Soup

50 grams Unsalted Butter1 Bay Leaf2 Carrots/diced2 Red/Green peppers/diced1/4 Swede or 1Turnip/diced1 Onion/diced50 grams Dried Lentils50 grams Dried Soup MixSalt and Pepper to taste3/4 Pint Chicken Stock1/2 Milk1 tbs Corn Flour/or just flour
In a large pan melt the butter and then add the onion, carrots, red/green peppers and the swede/turnip. Cook for about 10 minutes or until soft.
Add the lentils, bay leaf, dried soup mix and the chicken stock. Bring to boil and then simmer for 30 minutes.
Add the flour to the milk and pour into the soup. Let it thicken and then simmer for 5 minutes. Serve and eat with fresh crisp bread/rolls.
Note. Dried soup mix I got from Asda and it is lentils,barley wheat,peas etc.
You can add cheese to this soup or some nice croûtons.
