Baked Eggplant

Ingredients
1 fresh eggplant, thinly sliced2 large tomatoes, slices3/4 cup crumbled feta cheese (I use reduced fat feta - which saves more on the calorie/fat count)4 tablespoons plain yogurt Extra Light Olive Oil - cooking spray Garlic salt Paprika
Directions
Preheat oven to 400 degrees.

Sprinkle the eggplant slices with garlic salt, leave for 30 minutes, then wipe off.
Spray baking dish with cooking spray.
Arrange eggplant and tomatoes in dish to slightly overlap.
Sprinkle with feta cheese, & spoon over yogurt. Sprinkle with paprika and garlic salt.
Bake for 30 minutes or until bubbling and golden.

Makes 4 servings.

    Pretty good. I made it as is, but used sour cream instead of yogurt. The garlic salt is what gives the wonderful flavor. Cubing the vegetables might distribute the flavor a bit better versus slicing. - 9/22/08

    This dish is phenomenal, I gave it a try as I had all the ingredients on hand and had never cooked an eggplant before. All I can say again is that it's amazing :) I did use sour cream instead but it would be just as good with the yogurt.

    I didn't have yogurt or sour cream, but I made it anyway. I used a mandoline to slice my eggplant very thinly but my tomatoes weren't firm enough to mandoline them. I also added a bit of Greek seasoning.

    Made this last night for dinner and made a good side dish. Layering the eggplant and tomato slices made a very attractive dish. There was a bit of liquid in the dish so use a slotted spoon. - 8/20/12

    This was good. I substituted sour cream for the yogurt because i could not find a small container of plain yogurt. I will probably make this again. I agree with another reviewer that a chopping of the vegies might work better. - 8/24/10

    This was excellent. I used low fat sour cream and a little taco cheese I had sitting around. Next time I'll try the feta because I think it would give it that extra kick. Also added black beans which worked nicely! - 8/17/10
