Single Serve Cheater Scalloped Potatoes

3 medium Potato, sliced thin (use mandolin if available)1/2 medium Onion, sliced thin2 tsp Butter, salted 1 cup Milk, 2%, 2 tbsp All-purpose FlourSalt to tasteBlack Pepper to taste
1. Spray two single serving ramekins with a thin layer of cooking spray.
2. Layer in the following order: Potatoes, Onions, Sprinkle of Flour, dash of salt and pepper. Repeat layer until out of ingredients.
3. Top with 1 tsp butter and 1/2 cup milk each.
4. Bake uncovered at 400F for about 30 minutes or until tender when poked with a fork.
5. Let cool 5-10 minutes before serving.
