Red Quinoa Mixed Grain Cereal

Ingredients
1/2 cup dry Red Inca Quinoa1 cup water1 cup Bob's Red Mill Mighty Tasty GF Hot Cereal1/4 cup almonds, chopped or ground2 tsps. cinnamon2 Tbsps. flaxseed, ground3 1/2 cups water
Directions
Place quinoa in bowl of water to cover, swish and rinse several times. Drain. Bring 1 cup of water to boil, add quinoa; bring to a boil, reduce heat to low and cook, covered, for 15 minutes until water is completely absorbed.

While quinoa is cooking, bring 3 1/2 cups water to boil. Add dry hot cereal mix, nuts, flaxseed meal, and cinnamon to water; reduce heat to low and cook, covered, for 10 mnuntes. When water is almost completely absorbed add to quinoa, and combine.

Serve with 1/3 cup soy milk. Top with 1/4 cup blueberries. Approximately 7 servings.
