2 serving Arborio Rice 1/2 cup Risotto rice (by CATHIES) 4 cup, shredded Cheddar Cheese 2 large Egg, fresh, whole, raw 0.5 cup Milk, 3.25% 3 stalk Broccoli, fresh 2 cup kale - Glory chopped kale, fresh 0.5 medium (2-1/2" dia) Onions, raw 0.5 serving 1 Med. Green Bell Pepper 4 1tsp Olive Oil
Cook rice. Sautéed onions, green pepper and kale in olive oil. Set aside. Chop broccoli. Steam for 3-4 minutes in 1/2 cup water. Beat eggs and milk together. Combine all ingredients well and put in 8 x 8 casserole dish. Sprinkle pinko crumbs on top (optional). Bake at 350 for 30-40 minutes or until done.
