Oatmeal Flax Seed Cookies

Ingredients
1 cup Smart Balance Buttery Spread1 cup Brown sugar, packed1 Egg (large)1 tsp Vanilla1.5 cups All-purpose Flour1 tsp Baking Soda.25 tsp Salt2 cups Quick-cooking rolled oats (not instant)3 tbsp Flax Seeds
Directions
Cream Smart Balance and brown sugar in large bowl. Add egg and vanilla. Beat well.

Add four, baking soda and salt. Mix until no dry flour remains.

Add oats and flax seeds. Mix well. Drop 1 tbsp each about 2 inches apart onto greased cookie sheet. Bake at 350 for 8 to 10 minutes until golden.

Makes about 3.5 dozen (42) cookies.

    Made these tonight, with a few changes:
    1. Used 1 cup of honey almond granola instead of 2 cups of rolled oats.
    2. Used 2 Parkay marg.sticks (1 cup) instead of buttery spread.
    3. Tried to chop/grind flax seeds with my Sunbeam Oskar Jr. - didn't cut a single seed.

    These cookies were excellent! However, I didn't get to make 42 (maybe because I used butter and raisins!), so I adjusted the calories (116). I will definitely make these again, a great morning snack that keeps you full long! - 7/1/08
