Spicy Jamaican Meatish Patties

1/2 cup TVP granules3 - 4 tbsp hot vegetable broth1/3 cup red onion, minced2 tsp olive oil1/2 cup diced tomatoes1/2 tsp salt1 tbsp garlic powder3/4 tsp mustard powder1 tsp Tabasco1 tsp curry powder1 tsp cornstarch2 1/4 cups flour1 tbsp curry powder1/2 cup shortening1 egg yolk1/4 cup cold water
Combine TVP and broth in a small dish. Let stand 10 minutes.
Saute onion in the olive oil over medium heat until golden.
Stir in diced tomatoes, salt, garlic powder, mustard powder, Tabasco and curry powder.
Cook, stirring, 1 minute.
Stir in the cornstarch, followed by the TVP, and cook 1 minute more.
Remove from heat and set aside to cool slightly.
Preheat oven to 450F.
Combine flour and curry powder in a large bowl.
Cut in shortening until mixture resembles coarse meal.
Beat together egg yolk and water.
Stir into flour mixture until it just forms a pastry dough.
Roll out on a floured surface and divide into 15 squares.
Place equal amounts of filling on a 1/2 of each square and fold pastry over it, pressing with fork to seal seams.
Place prepared pastries on baking sheets. Dock each pastry with a fork.
Bake for 12 minutes, serve immediately or cool completely on sheets for freezer storage.
