Dijon Baked Cod

Ingredients
20 oz Cod (fish) 1 tbsp Pompeian Extra Virgin Olive Oil (by KINGS999) 3 tsp Grey Poupon Dijon Mustard .5 serving Lemon, fresh squeezed, juice of one whole lemon 1 dash Pepper, black
Directions
Preheat oven to 400 degrees.

Spray non-stick spray on your dish (We use a covered fish pan but a casserole dish works, too.) It is important that the dish is covered to keep in the steam.

Dry your fillets well. Place in your dish. Set aside.

Whisk the remaining ingredients together in a bowl until well combined.

Brush this dijon sauce onto the top of the fish. Use all the sauce.

Cover and back for 20 minutes (could be a little more or less depending upon your oven). Fish should easily pull apart when thoroughly cooked.
