Shrimp Primavera Pasta

Ingredients
8 oz Spaghetti, uncooked2 Medium Onions chopped3 Cloves Garlic, minced1 Large Green Bell Pepper, chopped2 Medium Ripe Tomatoes, chopped1 cup Chicken Broth3 oz Philadelphia Neufchatel Cheese1 Tbsp Dried Basil1 cup Cooked Shrimp, in small pieces5 cups Fresh Spinach Salt & Pepper to taste
Directions
Cook spaghetti as directed.

In large non-stick skillet sprayed w/cooking spray, saute onion, garlic & green pepper until just tender. Add chicken broth and basil; when hot add Neufchatel cheese, stirring until just melted. Stir in cooked shrimp. When hot, add fresh spinach leaves, stirring until spinach is wilted and hot. Remove from heat and stir in fresh, chopped tomatoes. In large bowl, toss cooked spaghetti with sauce until pasta is well coated. Season with salt and pepper, to taste.

Makes 6 ample servings.
