Hawaiian Style Chicken over Rice

Ingredients
1-1/2 # boneless skinless chicken breasts1/2 tsp salt2 TBL canola oil1/4 cp frozen diced green peppers1/4 cup frozen diced onions2 cps instant rice (I use Uncle Ben's Instant Rice in Boil-in-Bags).1-1/2 cps water1 (20 oz) can diced pineapple (drained)1 (18 oz) jar sweet & sour sauce
Directions
1: Preheat large saute pan on med-high for 2-3 minutes. Cut chicken into bite-size chunks & sprinkle w seasoned salt. ... Wash hands after handling chicken.

2: Place oil in pan, swirl to coat. Add chicken, green peppers & onions. Cook 6-8 minutes, stirring often until internal temp of chicken reaches 165 deg F.

3: Meanwhile, place rice & water in a microwave-safe bowl. Cover & microwave on HIGH 5-7 minutes.

4: Reduce heat on chicken to low. Sitr in remaining ingredients. Cook 2-3 more minutes, stirring occasionally or until sauce is thoroughly heated. Serve over rice.
