Quick and Delicious Beef & Broccoli

1 lb. London Broil beef4 cups chopped broccoli flowerettes1 can beef broth2 tbsp. cornstarch1 tbsp. packed brown sugar1/4 tsp. ground ginger1/4 tsp. garlic powder1 tbsp. soy sauce2 cups rice (long grain white used for this recipe)
Thinly slice london broil. In separate bowl stir 1 c. beef broth with brown sugar, cornstarch, and soy sauce until smooth.
Spray skillet with cooking spray and heat on med-high for one minute. Stir fry 1/2 beef mixture until browned. Remove from pan. Stir fry remaining beef mixture and remove from pan.
Add remaining broth, ginger, and garlic powder to pan and heat to boil. Add broccoli and return to boil. Cover pan and simmer broccoli for 5 minutes or until tender crisp.
Stir cornstarch mixture and then add to broccoli mixture in pan. Heat until mixture thickens (stirring constantly). Add beef back to pan and heat through.
Serve over your choice of rice (white long-grain was used to calculate calories in the recipe)..

This was a good easy recipe. My entire family enjoyed it. I did cheat a bit and after I chopped up the broccoli I put it in the microwave for 2 minutes so they were already almost done for the dish. Served it with jasmine rice and my family loved it. Only cook the beef for a minute or it gets chewy. - 8/31/13
