Black bean spanish rice

Ingredients
2 cup White Rice, long grain, cooked 1can food club black beans (drained and rinsed)1.25 cup Diced Tomatoes & green chilies (1 can Rotel)3 tbsp Ketchup, Heinz 1 leek rinsed and chopped into half moons2 clove Garlic crushed1 tsp Cumin (ground) 1 tsp Chili powder
Directions
Spray pot with cooking spray. Add leeks and garlic and saute until soft. Add drained beans and cumin and chili powder. Cook for 1 minute to release the spice flavor. Add the Rotel tomatoes with green chilies. Stir in the cooked rice and the ketchup. Heat until hot. Garnish with cilantro and a lime wedge if you like.
Makes 6 servings of 2/3 cup each.
