Mock Tuna Salad

Ingredients
1 can garbanzo beans, drainedabout 8 baby carrots, shredded3 tbsp dill pickle relish3 tbsp vegennaise or mayonnaise1 shallot, chopped, or 2 tbsp chopped onion1 tsp- 1 tbsp mustard (optional)salt and pepper to taste
Directions
1) drain garbanzos and place into small bowl; mash w/ potato masher until all whole beans are mashed
2) add other ingredients, mix well
3) let chill for about an hour before serving

makes 6 yummy sandwiches.

    I just made this, and I put 1/3 of it in my snadwich, which is twice as much as this recipe calls for. I may go unmake half the filling! But this is really tasty!. I found mashing my canned beans difficult (I used Furman's) so I put them into my food processor and pulsed until they were mashed. - 7/21/11
