Potato, boiled and peeled, 20 small (1"dia.) Onion thinly sliced, 1Fresh Chives, 1 tbsp chopped Half and Half Cream, 1 cup*Lemon Juice, 0.5 cup Butter, salted, 1 tbsp Parsley, 2 tbsp Salt, 1 dash Pepper, black, 1 dash
Melt the butter and fry the onions until light brown.Add the boiled potatoes, chives, salt and pepper and keep stirring for 3 minutes. Add the lemon juice and cook on low flame for 1 minute. Put off the flame, and immediately add the cream and mix thoroughly. Garnish with the parsley and serve warm.
