My favorite Rice pudding

Ingredients
1c long grain instant rice2 large eggs1/2c organic sugar1/2t real vanilla extract1/2c loose raisins21/2c silk light vanilla soy milk1t cinnamon1t nutmeg
Directions
cook rice on stove, in the meantime, lightly beat two eggs in small bowl, take all the rest of ingrediant and mix in seperate large bowl.
When the rice is done dump that in the large bowl, stir it so, the rice will cool in the cold soy milk, then stir the eggs in last. Dump all this in a oven proof baking dish and cook in the oven for 20 to 40min till creamy and thick on 350. Makes 4 3/4 cup servings.
