MAHI MAHI BURGERS

Ingredients
1 lb of Mahi Mahi fillets2 Tbs of minced cilantro2 Tbs of minced ginger2 Tbs of minced shallots2 tsp of soy sauce1 tsp of honey dash of pepper
Directions
With a large chef knife chop the fish using quick even straight up and down motions until you have a mass of 1/4 inch pieces.
Transfer to large bowl and gently stir in all ingredients except olive oil. Be careful not too overmix. Divide mixture into four patties 1 inch thick. Chill in refrigerator at least 20 min or up too 2 hours before cooking.
Heat oil in large nonstick skillet over medium heat. Add burgers and cook until brown on both side and just cooked through. 4-6 minutes total.
**Note this can also be prepared with Salmon or any other firm fish.
