Homemade Broccoli Soup

Ingredients
3 cup, chopped or diced Broccoli, fresh 1 medium (2-1/4" to 3-1/4" dia.) Potato, raw 3 cup Chicken Broth, Free Range, Organic, TJ's (by LIVE2EAT2LIVE) 1 medium (2-1/2" dia) Onions, raw 4 oz Cheese, Monterrey Jack, 1oz = 1 serving (by KAUAI-CAROLANN) 1 tbsp Extra Virgin Olive Oil
Directions
Add oil to dutch oven. Add chopped onions and saute for 4-5 minutes. Add broccoli, potato, and broth. Bring to a boil, cover, and simmer for 15 minutes. When you can pierce potato with a fork, blend with immersion blender. Remove from heat, add cheese, and blend until smooth.

Serving Size: Makes about 7-8 cups
