Drain the liquid and transfer the cooked cauliflower "rice" to a separate bowl and let completely cool.
Mix together 2 tablespoons of chia seeds with 6 tablespoons of water and set aside to allow mixture to thicken.
Take the cool cauliflower "rice" and transfer it onto a dry towel and squeeze towel to drain excess moisture. then place mixture in a bowl and add chia seed and water mixture as well as remaining ingredients and mix well until everything is incorporated.
Spread mixture on baking sheet and bake at 400*F for 30 minutes. after the 30 minutes have passed carefully remove and flip crust and proceed to cook another 15 minutes.
Proceed to add tomato sauce, spices, vegan Parmesan cheese, red onions as well as the spinach and cook in oven for another 5-10 minutes or until toppings are cooked as desired.
