Linguini & Clam Sauce (Red or White)

1 Tblsp. Olive Oil5 cloves fresh garlic, minced3 - 6.5 ounce Chopped Clams in Clam Juice1/2 c. white wine, any kind4 Tblsp. Parsley, dried or fresh1 can diced tomatoes in sauce (optional)salt & pepper to taste1 lb. whole wheat linguini or spaghetti
In skillet, lightly sautee fresh garlic in olive oil over medium high heat. Once garlic is very lightly golden in color, add clams & juice to skillet. Stir & simmer for a few minutes. Add white wine, bring to a low boil or until alcohol evaporates. This may take about 10 minutes. Add canned, diced tomatoes, (optional-if making a red sauce, no tomaotes will make white sauce), salt & pepper. Pour clam sauce over cooked & drained whole wheat spaghetti. Serve immediately. Serves 6.
