Skinny Confectioners' Icing

1 cup confectioners' (powdered) sugar, sifted1-3 tsp of fat free soy milk or 1 tablespoon flavored syrup (like the kind used for flavoring lattes and Italian sodas)
Mix the sugar with the soy milk or syrup, either with a fork or small whisk. Mixture will resemble a very thick paste or batter. Carefully dribble in remaining soy milk, one teaspoon at a time, until mixture resembles a thin cake batter, adjusting additional soy milk by either less or more teaspoons until desired consistency is reached. If too watery, add in more sugar by the tablespoon.
This recipe makes easily three times what you need to top 12 cupcakes, possibly even more depending on how much you like to use.
