Adzuki bean soup with ham

Ingredients
2 cup, chopped Carrots, raw 2 stalk, large (11"-12" long) Celery, raw 1 cup, diced Ham, regular (11% fat) .5 cup, chopped Peppers, sweet, red, fresh 1.25 cup Adzuki Beans (by SUHAILECE) 2 cup Chicken stock, home-prepared 1 cup, chopped Onions, raw 3 cup (8 fl oz) Water, tap
Directions
Chop carrots, celery, onion, and peppers. Place on bottom of crockpot. Add ham, dry adzuki beans, chicken stock, and water. Add herbs and garlic if desired. (I used coriander and garlic.) Cook on high setting for 3 hours or 7 hours on low.
