"Soiled" Rice Using Zatarain's Dirty Rice Mix DEC2015

Ingredients
1 Box Zatarain's New Orleans Style Dirty Rice Mix 1 tsp Extra Virgin Olive Oil 1 cup, diced Celery, raw (About 2 large stalks' worth)2.5 cup (8 fl oz) Water1 can , 4 oz, Hatch Diced Green Chiles Mild with juice.2 tbsp Chia Seeds
Directions
Heat up a pot, put in the olive oil.
When oil is hot, add Dirty Rice and stir to toast lightly.

Add diced celery and continue to stir to soften celery - about 2 minutes.

Add 2.5 cups water (per Dirty Rice Mix directions)

Bring to a boil, stirring as needed, then lower heat, cover and simmer about 15 minutes without lifting the lid.

Add can of diced green chiles, stir in to mix evenly.
Check liquid level, if needed add a tablespoon or two of water.
Cover again, and continue to simmer another 10 minutes.

Check after 20 minutes total, add 2 tablespoons Chia seeds (more if desired) and stir in.

After another 5 minutes, check to see if liquid absorbed and looks good, remove from heat and replace cover. Let sit 5 minutes then fluff with fork and serve.

If liquid not absorbed at 25 minute mark, continue to simmer a few minutes as needed, then remove from heat and let stand (covered) 5 minutes before fluffing with fork and serving.

Serve with hot sauce (e.g. Tabasco) as desired.
