Red Velvet cupcakes

Ingredients
Cakes:2.5 cups self rising flour1 tsp. baking soda1.25 cups veg. oil2 eggs1.5 cups sugar1 tsp. vanilla1 cup buttermilk2 Tbsp. red food coloringFrosting:8oz. cream cheese.5 cup butter1lb powdered sugar1 tsp. vanilla
Directions
mix eggs, oil, sugar and vanilla until light and fluffy. Add flour and baking soda. Slowly add buttermilk. Bake at 350 for 10-12 mins.

For frosting: blend all ingredients until smooth and creamy.

This recipie make a 3 layer cake instead of cupcakes as well!
