15 Flour Tortillas Burrito size2 Yellow or Red Bell Pepper, chopped 1 Med Onion, chopped15 large Eggs 3 Potatoes -Cubed & Roasted 10 oz Ground Pork Sausage, Lean cooked, drained 7 oz Cheddar Cheese, shredded2 tbsp Extra Virgin Olive Oil
Cube (1/2") and roast potatoes first (425 for 25-30 min). Sauté onions in 1 T of the olive oil. Add peppers when onions begin to turn golden. Sauté about 3 more minutes and remove from heat. Brown sausage and drain. Assemble your bowls of ingredients. Scramble the eggs last in the other T olive oil. Soften the tortillas in the microwave between dish towels (or paper towels) for 30-60 seconds. We did 4 at a time for 30 seconds. Add ingredients and roll tightly. Stack on a tray. Wrap in cling wrap and freeze. To reheat, start with wrap on, heat 1 min, turn, heat another minute. Remove wrap. Heat another minute until warm as you like. Add hot sauce or salsa as desired.
