1 seedless cucumber1 red pepper1 small onion5 cups V8 or other vegetable juicehot sauce (to taste)salt and pepper (to taste)
Add 1/2 cucumber, 1/2 red pepper and 1/2 onion to food processor. Add 1 cup vegetable juice and puree. Chop the rest of the veggies and add to the puree. Mix in the last 4 cups of vegetable juice and season to taste with the salt and pepper and hot sauce. Chill before serving. Makes 8 1-cup servings.
