Ingredients
2 medium (2" dia, 5" long, raw) Sweet potato, cooked, baked in skin, without salt 1 cup Chickpeas (garbanzo beans) 1 cup Cooked Kale .25 medium (2-1/2" dia) Onions, raw .25 leek Leeks 2 1tsp Olive Oil 1 tbsp Sabra Olive Tapenade Hummus 1.5 fl oz Lemon Juice 1 tbsp Tandoori Spice Curry Powder (by CHUCKLES0719)
Directions
Baked sweet potato, skin and cut in to 8-10 pcs - while baking toss chickpeas in seasoning and baked for 25 minutes. Sautee onions and leeks in olive oil until slightly caramelized, add kale and 1/4 c. water simmer till done and liquid gone. to serve place kale on bottom, layer onion/leek mixture, top with chickpeas and sweet potato. Drizzle with hummus dressing
