Individual Vegetable Casseroles

Ingredients
3 tbsp Smart Balance Buttery Spread 1 medium onion, chopped 2 cups grated carrots 1/2 green bell pepper, chopped1/2 red bell pepper, chopped1 package (10 oz) yields Spinach, frozen 3 large eggs, well beaten1 tsp salt Pepper, to taste2/3 cup Matzo Meal
Directions
Preheat oven to 375 degrees F and spray 12 muffin tins with nonstick coating.

Heat margarine in saucepan and sauté onion, carrots, and peppers for a few minutes, until online is translucent. Set aside.

Put well-drained spinach in a bowl. Add eggs, salt, and pepper. Mix thoroughly. Add sautéed vegetables and matzo meal. Mix well. Spoon into muffin tins.

Bake for 35-40 minutes. Cool 10-15 minutes before removing from pan.
