Aebelskivers ~MY Recipe for Danish pancakes+jam+powdered sugar!

2 medium Egg, fresh, whole, raw 2 cup Milk, nonfat 1 tsp Baking Soda 1 tsp Granulated Sugar 6 tsp Lemon Juice 'Real Lemon' 100% juice 2 cup Flour - Gold medal all purpose flour 0.50 tsp Morton Salt 44 1tsp Canola Oil 22 tbsp Blackberry Jam~AMISH WEDDING (DUNKINS' MKT.) 18oz~35 cals per tbsp serv NO SODIUM!!!!!!!! 44 tsp Powdered Sugar
1. NOTE: JAM and POWDERED SUGAR ARE TOPPINGS! YOU put them ON TOP OF the aebelskivers. DO NOT ADD them to the recipe mixture!!!!!
2. Mix all DRY ingredients together in a medium-sized bowl. Set aside.
3.Mix Milk with lemon juice to form buttermilk .Stir. Let sit for AT LEAST 5 minutes. Set aside.
4. Take the eggs and separate the egg WHITES from the YOLKS! Set yolks aside for a moment.
5. Take the EGG WHITES and beat them in mixer until STIFF.
6. Add the yolk mixture and the dry mixture to the egg whites.
7. Now add the buttermilk mixture. Beat altogether til smooth.
8.Turn on stove to medium to low heat.
9. Put a little canola oil in each cup of the cast iron AEBELSKIVER PAN. DON'T FORGET ***THIS STEP*** OR ALL YOUR LITTLE ROUND PANCAKES will STICK TO THE PAN and you will have an AWFUL MESSY PAN TO CLEAN UP ,much less to use!
Believe me , ALL THIS EFFORT IS WORTH the TASTE and if you have ever been to SOLVANG,CALIFORNIA , THEY MAKE THESE BREAKFAST TREATS regularly,ALL DAY LONG!
I AM NORWEIGAN ,so I grew up with these for breakfast and have enjoyed them over the years!
10. Now ,scoop a little batter and pour into EACH cup ,watching it closely as it FRIES the batter.NOTE: I use a FUNNEL PITCHER. SO I take the bowl with the batter and POUR IT into the FUNNEL PITCHER. It WILL ALL FIT!
11. Pour the batter from the funnel pitcher into each cup.
12.WATCH CAREFULLY! They WILL BURN ,if left unattended! When they start TO BUBBLE{maybe a few minutes~2 or 3} and LOOK HARD around the SIDES of each circle, TURN OVER USING A LONG stick skewer or possibly a fork {although forks do not work that well as a turning tool til the aebelskivers are cooked on the other side}.
13. After cooking on BOTH sides, put in a bowl to serve to others. If you try to eat them in between cooking,THEY'LL BURN !Or have someone who knows how to cook, take turns with you!
14. Enjoy each aebelskiver with a tablespoon of jam {mine made by the Amish have no sodium and only 35 cals per tbsp!} and a teaspoon of powdered sugar! To eat any other way,well,is OK ~Apple butter tastes VERY good with them and some people prefer to have butter. If you do, ***REMEMBER TO ADD THE CALORIES OF THE BUTTER WITH EACH ONE ~1/2 TBSP OR SO. I will add my butter separately as I DID eat them with butter and jam and FORGOT to include butter with the counting calories for the recipe!***THIS RECIPE *** IS listed with the SIDE ITEMS as I have NOWHERE to fit it into BREAKFAST ITEMS, THAT is when most people eat them,but they taste wonderful and make a great meal with some fresh fruit and tea to drink !
