CJ's Tex-Mex Lasagna

Ingredients
1 large onion, chopped8 garlic gloves (or more), chopped1 large stalk celery, diced1 red bell pepper, diced3.5 cups prepared salsa1 tsp ground cumin2 tsp chili powder2 (19 oz.) cans black beans16 oz. chicken breasts, shredded2 cups frozen corn kernels9 whole wheat low carb tortillas6 slices (more if you like) fat-free american cheese singles, torn into strips
Directions
Preheat Oven to 350.

Spray a large non-stick frying pan with Pam, and add onion, garlic, celery and red bell pepper cooking until tender and onions are translucent.

Add salsa, cumin, chili power, and corn and heat through.

Spoon a quarter of the mixture into a 9x13 sprayed casserole dish.

Arrange 3 tortillas in a triangle to get maximum coverage and spoon another quarter of the mixture on top. Add 1/3 of the shredded chicken and 2 slices of the cheese. Repeat this layering 2 more times.

Bake in the oven, uncovered, approximately 30-40 minutes until heated through and getting crispy on top.
