Red Bell Pepper Frittata

Ingredients
1/2 c. water1/3 c. uncooked couscous1 T. water3/4 t. salt1/4 t. black pepper4 large egg whites3/4 c. egg substitute (Egg Beaters)Cooking spray2 c. red bell pepper strips1 c. thinly vertically sliced onion2 gar lic cloves, minced1/3 c. monterey jack cheese
Directions
Preheat oven to 350. Bring 1/2 c. water to boil in small saucepan, gradually stir in couscous. Remove from heat, cover and let stand 5 minutes. Fluff with a fork.

Combine 1 T. water, salt, pepper, egg whites and egg substitute in a medium bowl, stirring with a whisk.

Heat a 10" ovenproof nonstick skillet over medium high heat. Coat pan with cooking spray. Add bell pepper, onion and garlic. Saute 5 minutes. Stir in couscous and egg mixture. Cook over medium heat 5 minutes or until almost set. Sprinkle with cheese.

Bake at 350 for 10-15 minutes or until done. Let stand 5 minutes before serving. Cut frittata into 4 wedges, serving size is one wedge.
