Now's the Caramelized Onion Soup

Ingredients
1 tbsp Extra Virgin Olive Oil 4 medium (2-1/2" dia) Onions, raw 1 tbsp Balsamic Vinegar 4 cup Beef broth, bouillon, consomme 56 gram(s) Publix Brand Reduced Fat Mozzarella String Cheese (serving = 1 stick)
Directions
Heat 1 tablespoon of oil on pan on high heat. Add onions to hot oil stirring constantly for 10 minutes. Reduce heat to medium and continue to stir for 10 minutes. Add a dash of salt, reduce heat to medium-low and cook 10 more minutes. Remove from heat add balsamic and stir making sure to scrape the pan. Add broth return pan to high heat and bring to a boil lower the heat and simmer for twenty minutes. Dish out the servings and top with 1/4 cup cheese each. You can add bread to make it more French onion but that is not in the calorie count. You can also broil to make the cheese crusty or just stir in and enjoy.
