Taco Salad Bowls

Ingredients
*Tortillas, MISSION, flour tortilla, 8 inch, 4 serving Chili powder, 1 tbsp 93% Lean Ground Turkey, 12 oz Carrots, raw, 1 cup, grated *Tostitos Mild Salsa, 10 tbsp Tossed Salad, 4 cup *Kraft 2% Shredded Cheddar Cheese, .5 cup Cilantro, raw, 4 tbsp
Directions
Preheat oven to 425 degrees. Crumple 4 large sheets of foil to make 4 3 inch balls; place on a baking sheet. Place one tortilla on top of each ball; sprey tortilla with cooking spray. Sprinkle evenly with 1/2 teaspoonof the chili powder. Bake 6 to 8 minutes or until tortillas are golden brown. (Tortillas will drape over balls as they bake.)

Meanwhile: Brown turkey with carrots and remaining 2 1/2 tsp Chili Powder in a large non-stick skillet on medium high heat, stirring occasionally. Add 1/2 cup of the salsa; cook 2 minutes, or heated through, stirring occasionally.

MIX Salsa and Plain lowfat yogurt in a bowl, add salad greens and toss to coat. Spoon into tortilla shells; top with meat mixture, cheese and cilantro.

add chopped tomatoes if you like.

    Very good. Added a little Light Ranch instead of lowfat yogurt. Husband said he couldn't taste the carrots and the turkey was as good as beef. - 6/24/08
