Sweet Potato-Shallot Hash

Ingredients
Sweet potato, 1 lb.Shallot, 1 largeFresh or dried sage1 tsp olive oil
Directions
Peel and dice sweet potato into cubes. Chop shallot. Spread dry potatoes on cookie sheet and baker in hot oven (400 degrees) for 10-15 minutes until just tender, but not mushy. Heat oil in skillet over medium-high heat. Toss potatoes and shallots together in pan to coat, then press down into pan. Allow to sit and crisp, do not stir, but watch so as not to burn. When crisp (about 5 minutes), toss and check for doneness. toss in sage and season with salt and pepper, if desired.
