Stuffed Red Peppers

Ingredients
1 tbsp Basil 2 clove Garlic minced1/2 cup chopped onion2 large red sweet bell peppers 1 cup Shredded Cheddar Cheese 8 oz 80/20 ground beef chuck 1 cup Tomatoes
Directions
Cut peppers in half length ways, remove seeds and place in boiling water for 5 minutes. Drain peppers and set aside. Meanwhile brown ground beef, drain and rinse to remove extra grease. Sautee onions and garlic for a few minutes then add the beef, tomatoes and basil-simmer for 10 minutes longer. Remove from heat and toss in cheese. Spoon mixture in pepper halves and bake in a 350 degree oven for approx. 45 minutes. You can save a few sprinkles of cheese to top before baking.
