Tortilla Espanola - Low Fat/ Cal - Spanish Omelet

Ingredients
3.5 cup - Egg Beaters1 cup - Onions, raw, , chopped6 oz - Ore-Ida Golden Crinkles (French fries), No calorie Pam (Olive oil flavor) to avoid the eggs sticking to the pan.Salt to taste
Directions
Pre-heat an 8" non-stick pan. Spray it with Pam olive oil flavor and sauté the cup of Chop onion stirring constantly. Pour teaspoons of water to caramelize the onion without having to use oil. Set the onion aside in a big bowl. Sauté the frozen French fries and cut them into small pieces. Set aside on the bowl with the onions. Pour 3.5 cups of egg beaters. Add salt to taste.
Mix the eggs, onions and potatoes and pour in the pan. Cook in med to low heat covered. Carefully stick the spatula underneath to make sure the eggs are not sticking to the pan. Cook covered for 5 minutes in med to low heat.
Cover the pan with a big dinner plate and hold the plate with one hand and the pan with the other, Flip the tortilla over the plate and slide it back into the pan to cook the oder side. Once the eggs are, completely cook (no runny) Flip to a platter and cut in 8 slices. Enjoy!

    This was not quite the same as a real spanish tortilla, but a great and tasty substitute. I used to eat the original every Saturday. Try can garbanzo beans browned with the onions as a potatoe substitute. - 1/9/10
