Whole Wheat Chocolate Chip Banana Bread Muffins

1/2 cup all-purpose flour 1/2 cup and 2 tablespoons whole wheat flour3/4 teaspoon baking soda 1/4 teaspoon salt 1/4 cup white sugar 1 1/2 eggs, beaten 2 tablespoons butter, melted 2 1/4 bananas, mashed1/4 cup of chocolate chips
1) Spray a 12 muffin pan with Pam.
2) Preheat oven to 350 degrees F (175 degrees C).
3) In one bowl, whisk together flour, soda, salt, and sugar. Mix in slightly beaten eggs, melted butter, mashed bananas and chocolate chips.
4) Ladle evenly into prepared pans.
Bake at 350 degrees F (175 degrees C) for 20-30 minutes, depending on your oven, or until a wooden toothpick inserted in the center comes out clean.
OPTION: replace 1/4 cup of semi-sweet chocolate chips with 1/4 cup walnuts

This sounds like a really yummy recipe but I can't rate it yet since the recipe is not specific. What size eggs are 1 1/2....would a jumbo egg have the same measurement? Bananas vary in size, so how many cups of mashed bananas would equal 2 1/2 bananas? Please let me know so I can try it. Thanks! - 9/30/11

These are tasty but a tad dry. In order to make calorie count per muffin correct. you'd need to add the chocolate chips to each as you put them in the muffin cups. I doubled the recipe and it only made 18 normal size muffins (just to top of cup). They were definitely sweet enough. Good but a bit dry - 4/4/10
