Bean Salad

Ingredients
3 cans of beans,well drained.Your choice..I like kidney,white & garbanzo.Diced red & green pepper1/2-1 onion small dice1 yellow & 1 green zucchini....medium chunkCelery diced.Mix all in large bowl.Add 1-2 TBL olive oil1/4 C rice vinegardash of garlic pwderdash of italian seasoningS&P to taste. Mix well.Taste & adjust seasonings.If you prefer,sub italian dressing for the oil,vinegar & seasonings.Cover & refrigerate.After several hrs,stir & if too dry, add rice vinegar. You don't want it soggy.To serve, you can add diced veggies like tomatoe or meat to make it a meal.Serve on lettuce,as is or on cooked pasta.
