Spicy Tuna Cakes

Ingredients
7 oz tuna (low sodium)1/2 bell pepper 1 small onion 6 Tbs breadcrumbs, fine 2 Tbs fresh cilantro 2 egg white 1/2 tsp cayenne pepper 2 plum tomato 2 tsp fresh lemon juice 2 tsp olive oil
Directions
1) Drain and flake the tuna into a mixing bowl.

2) Rinse and chop the pepper, onion and tomato. Beat egg white.

3) Mix all ingredients except tomato and oil and shape the mixture into four patties. Cover and refrigerate for about 20-30 minutes.

4) Heat oil in a nonstick skillet over medium high heat and cook patties for about 3 to 4 minutes on each side until golden brown. Serve topped with chopped tomato.
