Coconut confetti brown rice

Ingredients
.75 cup full fat Coconut Milk.75 cup water1 cup uncooked brown rice (basmati, jasmine, or medium grain)0.75 cup frozen mirepoix vegetables (onion, carrots, celery)0.5 cup frozen peasSaltPepper
Directions
Shake the coconut milk can to combine the milk and cream. In a medium pot, bring ¾ cup coconut milk, ¾ cup water, a large pinch of salt, and the rice to a boil. Reduce to a simmer, cover, and cook for 15 minutes, until tender. Stir in frozen vegetables and cook for another 5 minutes. Season with salt and pepper to taste. A small amount of cayenne pepper will add some heat. Cilantro garnish is a nice addition.
